Sweet and Savory Saturday – Rich Chocolate Tofu Mousse

Tofu adds creaminess to this mousse without the extra fat.

Welcome to Sweet and Savory Saturday here at the Health and Food Forum’s Blog.  Today’s recipe of choice is a rich, creamy chocolate mousse made with tofu.  It can be served plain, with fresh fruit, or as a parfait with crushed vanilla wafers and cinnamon chips as shown above.  Tofu (soybean curd) is a healthy alternative to using heavy cream and eggs.  It is a good source of protein and healthy fats; and, it has been shown to improve cholesterol levels and to protect against heart disease and certain cancers – who knew health could taste so good!

Creamy Chocolate Tofu Mousse

Ingredients

2 (12.3 ounce) packages of firm lite tofu (drained if packed in water)

2 (3.9 ounce) packages of instant chocolate pudding mix

1/2 cup lite soy milk (plain or vanilla flavored)

1/2 TBS pure maple syrup

1/4 tsp ground cinnamon

Preparation

In a 6 cup capacity blender, puree the tofu.  Add the remaining ingredients and blend on medium for about 2-4 minutes.  Pour into serving dishes. Chill in the refrigerator for about 1-2 hours or until set.  Serves approximately 8-10 depending on presentation.
